How to Make a Delicious Croissant Breakfast Sandwich
I love to make this on an everyday basis because it is just that easy and takes about 25-30 minutes. Most of that time is the bacon cooking in the oven though.

For the ingredients you’ll need:
a croissant (the shape doesn’t matter!),2 eggs, heavy cream/milk, butter, salt, garlic and herb goat cheese/boursin, bacon, paprika, maple syrup, bourbon, white cheddar/or/gouda/or/cheddar

First you’ll want to get your bacon started in the oven. Lay your bacon on the sheet pan, put it in the oven, and preheat it to 360 F. I use a cast iron for my eggs so I also heat my pan up to 2 right now. Not high, keep it very low for now, our goal is to pre-warm it thoroughly.

While your oven is in the preheat stage (about 5-8 mins), put a tiny pot on your stove with 1tbsp bourbon and 2 tbsp maple syrup. 1-2 ratio. Turn the stove on medium low, and wait for it to start to bubble like pictured below. Mix it with a spoon and it should now be a thick thick syrup after bubbling for 1-2 minutes. If it’s super bubbly just keep stirring because once that air gets stirred out it will look more normal.

Once the oven beeps (or it’s been 8 mins) take out your bacon, sprinkle on paprika, and spoon on your thick sauce down the middle of each strip. Put it back in the oven for about 10-15 more minutes until cooked.


At this point I turn my cast iron up to 4.5 on my stove. I then crack 2 eggs in a bowl, add about 1tbsp heavy cream, and mix pretty good with a fork. No need to get your mixer dirty, this works just fine.
Then once the pan is hot i add about 1 tbsp butter, let it sizzle for a few seconds. Also you want to make sure it’s kinda bubbly because of the heat. Then dump your eggs into it and here’s the technique I use. You need to wait about 10 seconds for the bottom to form a base, and wait 5-10 seconds between each movement pictured below. And then you can flip it for a second to make sure the top is cooked.










Then slice your croissant, add goat cheese or Boursin to the bottom, add your eggs, bacon and cheese slice. Voila its ready to enjoy!!
