Easy Corn Dip Recipe for Quick Snacks

This is something that I make each week to have in the fridge so I always have a snack. There are two different ways you can eat it. For a flavor PUNCH you can eat it with salt and vinegar kettle chips. You can also just do regular kettle, or tortilla chips. For a first timer I’d recommend starting with the regular kettle or tortilla chips. The sauce on top already adds a big punch to the dip.

Here’s the ingredients: a bag of steam-able white corn (I typically can only find gold and white so that’s fine), garlic powder, salt, mayo, sour cream, chopped jalapeños, chopped green onions, and franks red hot original. (if you don’t like spicy things, i honestly can’t figure out why they even named it this because it’s more tart than anything. No heat at all. Very flavorful similar to tajin. Now that I’m thinking any it, I might actually just try tajin next time haha!

There’s 2 ways you can do this. You can either heat up the bag of corn in the microwave, or dump it out in a pan and heat it. I like to heat it just enough so it’s not frozen and just a little warm. Then you sprinkle your garlic powder on the corn , and jalapeños, and mix it in. Then you add sour cream and mayo and the little warmth from the corn should help them mix really well.

I then like to mix in some green onions and transfer it to a glass container. I layer a thin amount of franks red hot on it, and put it in the fridge for 2 hours before eating it. I mix the sauce into the dip otherwise it’s a little too much for my taste buds at once.



Corn Dip (Cold)

I make this on a weekly basis to have in the fridge for an easy snack!!
Prep Time 10 minutes
Cool in fridge before eating 2 hours
Course: Snack

Ingredients
  

  • 1 bag white steamable corn
  • 2-3 tsp garlic powder
  • 1 tsp salt
  • 2-3 tbsp chopped jalapeños
  • 1/3-1/2 c mayo
  • 1/3-1/2 c sour cream
  • 1-2 tbsp chopped green onions
  • ~1/4 c franks red hot original (it’s not even spicy idk why they call it this, it’s just flavorful)
  • 1 bag salt and vinegar chips for the most PUNCH of flavor or regular kettle chips/tortilla chips

Method
 

  1. Heat the bag of white corn either in the steam bag or dump it out on a frying pan. Heat it enough so it’s not frozen, it doesn’t need to get HOT. You can turn the heat off once they’re warm.
    Add about 2tbsp garlic powder, 2-3 tbsp jalapenos, and 1tsp salt in the corn and mix with a spoon.
    Add your 1/3-1/2 c sour cream and mayo. It really depends on how creamy you want your dip so try 1/3 c of each first and if you want to add more then you can.
    The heat from the corn should help the mayo and sour cream melt together really well.
    Add in your green onions, mix, and transfer the dip to a glass container.
    Layer about 1/4 c (or however much you want) franks red hot on top, I use a spoon to swirl it in a little bit.
    It tastes better if you make it and put it in the fridge for at least 2 hours before eating it.
    Serve with solar and vinegar kettle chips for a PUNCH of flavor or just regular kettle chips/tortilla chips.
